Instructions

1-First Steps: Prep and Rind Layer: Begin by preparing your ingredients: measure out the Rice Krispies cereal, fresh watermelon puree, butter, marshmallows, and vanilla extract. For the rind, melt 1 1/2 tablespoons of butter over medium-low heat in a saucepan. Add 2 1/2 cups of miniature marshmallows and green food coloring, stirring until everything melts smoothly. Once mixed, stir in 2 cups of rice krispies cereal and press this into a sprayed 9-inch round cake pan to form a 1-inch thick layer around the edge.

2-Center Layer and Finishing Touches: After cleaning the saucepan, melt 2 tablespoons of butter for the center. Add 3 1/2 cups of miniature marshmallows and pink or red food coloring, stirring until melted. Mix in 3 cups of rice krispies cereal and spread this in the middle of the pan. Let it set, then sprinkle and gently press 2 teaspoons of mini chocolate chips over the pink center to mimic watermelon seeds. Finally, cut into 6 to 8 wedges and store in an airtight container.
