Ingredients

Instructions

1-Rinse the rice: Rinse the rice under cool water until the water runs clear.

2-In a medium saucepan: combine the coconut milk and broth over high heat, stirring until smooth.

3-Bring to a boil, then add the rinsed rice.

4-Cover, reduce heat to low, and cook undisturbed for 15 minutes.

5-Turn off the heat and let the pan sit covered for another 15 minutes without opening the lid.

6-Fluff the rice with a fork, then stir in the lime juice, lime zest, and chopped cilantro.

7-Season with salt and pepper to taste before serving.
