Instructions

1-First, heat 1 tablespoon of oil in a large non-stick skillet over medium-high heat and sautรฉ the 1 3/4 pounds of diced chicken breasts for 3 1/2 to 4 minutes until cooked through, then set aside.

2-Next, whisk together the 1/2 cup teriyaki-style sauce, 2 tablespoons water, 1 tablespoon cornstarch, and 1 tablespoon honey to create the sauce mixture.

3-In the same skillet, heat the remaining 1 1/2 tablespoons of oil, then sautรฉ the 1 clove minced garlic and 3/4 cup of green onions for 20 seconds.

4-Add the 1 diced bell pepper and the chopped 8-ounce can of sliced water chestnuts, and cook for 2 minutes until they start to soften.

5-Pour in the sauce mixture and cook, stirring, for 1 minute to let it thicken.

6-Finally, add the cooked chicken and 1 cup shredded carrots, toss everything to combine and warm through, then serve the mixture over romaine or iceberg lettuce leaves. Top with the remaining 1/4 cup green onions and sprinkle with 1/2 cup roughly chopped unsalted cashews for extra crunch.
