Instructions
1-Preheat your oven: Preheat your oven to 350ยฐF (175ยฐC) and grease a 9ร9 inch pan to prevent sticking.
2-Mix the topping ingredients: In a bowl, mix 1/2 cup old fashioned oats, 1/2 cup brown sugar, 2/3 cup flour, 1/2 teaspoon cinnamon, and 1/3 cup melted salted butter until the mixture turns crumbly.
3-Form the base layer: Spread half of this crumbly topping into the prepared pan to form the base layer.
4-Layer the fruit: Layer 2 1/2 cups peeled and sliced peaches and 1 cup sliced strawberries evenly on top of the base.
5-Cook syrup: In a saucepan, cook 1/4 cup brown sugar, 3 teaspoons cornstarch, 1/8 teaspoon salt, and 1/3 cup water over medium-high heat, stirring until thickened.
6-Add vanilla to syrup: Remove the saucepan from heat and stir in 1/2 teaspoon vanilla extract, then pour this syrup evenly over the fruit layer.
7-Top with remaining topping: Sprinkle the remaining topping mixture over the fruit and syrup.
8-Bake and optionally broil: Bake for 35 minutes, and if you want extra crunch, broil on the top shelf for 2-3 minutes while watching closely to avoid burning.
