2 pounds skirt, flank, sirloin, or hanger steak, sliced into 1/2 inch strips

1 red pepper deseeded and sliced into thin strips

1 bell pepper deseeded and sliced into thin strips

1 medium onion peeled and sliced into thin strips

3 tablespoons olive oil for the marinade and cooking

1 tablespoon lime juice for the marinade

1/2 teaspoon chili powder for the marinade

1 teaspoon ground cumin for the marinade

A pinch of cayenne pepper for the marinade

1/2 teaspoon salt for the marinade

1/2 teaspoon ground black pepper for the marinade

2 cloves of minced garlic for the marinade

6 to 8 warmed tortillas for serving

Optional garnishes such as sour cream to taste

Instructions

1-First: slice 2 pounds of your chosen steak into 1/2 inch strips, and prepare the vegetables by deseeding and slicing 1 red pepper, 1 bell pepper, and 1 medium onion into thin strips.

2-Next: mix the marinade with 3 tablespoons olive oil, 1 tablespoon lime juice, 1/2 teaspoon chili powder, 1 teaspoon ground cumin, a pinch of cayenne pepper, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 2 cloves of minced garlic.

3-For optimal flavor: place the steak, vegetables, and marinade in separate sealable bags and refrigerate for at least one hour or overnight.

4-Once marinated: heat a skillet over medium-high heat and cook the vegetables for about 5 minutes until they reach a tender-crisp texture, then set them aside.

5-Cook the steak strips: in the same skillet for 7 to 10 minutes until they’re done to your liking.

6-Return the vegetables: to the skillet with the reserved marinade and heat through for a few more minutes to blend the flavors.

7-Serve: with warmed tortillas and garnishes for a finishing touch.
