๐Ÿ– Tender, fall-off-the-bone St. Louis-style ribs bursting with smoky, sweet BBQ flavor โ€“ perfect for wowing crowds at parties and BBQs.
๐ŸŽ‰ Easy to portion into finger-food bites, ready in about 3 hours for hassle-free entertaining with bold wood-fired taste.

  • Total Time: 3 hours
  • Yield: 6 servings

Ingredients

– 2 racks St. Louis-style pork ribs for the main protein

– Preferred BBQ rub for savory base layer and deep seasoning

– 4 ounces unsalted butter, cut into pieces for richness and glossy sauce finish

– 1/2 cup light brown sugar for sweetness and sticky coating

– 1/2 cup agave syrup or honey for balance, shine, and caramel-like sweetness

– BBQ sauce for tossing and coating the ribs

Instructions

1-First Step: Trim and cut the ribs Start by trimming excess fat from the ribs, but do not remove the membrane. Cutting across the rack into individual pieces helps the ribs cook faster and makes serving easier. A good trick is to stand the rack on its edge so you can see the bones more clearly before slicing between them.

2-Second Step: Season well and let the rub set Coat the ribs thoroughly with your preferred BBQ rub. Let them sit at room temperature for 15 minutes up to 1 hour so the seasoning sticks better. This short rest gives the rub time to cling to the meat and start building flavor before the ribs go on the grill.

3-Third Step: Preheat the pellet grill Set the grill to 275ยฐF with the lid closed. Pellet grills are a great match for this recipe because they deliver steady heat and a strong wood-fired taste. If you use a quality thermometer, you can track both grill heat and meat temperature more accurately, which helps with consistent results.

4-Fourth Step: Cook the ribs until they hit 170ยฐF Place the ribs meaty side up on the grill grate. Cook for about 90 minutes, or until the internal temperature reaches 170ยฐF. Rib size, outdoor weather, and grill conditions can change the timing a bit, so use temperature as your guide rather than the clock alone.

5-Fifth Step: Move the ribs to a pan with sauce ingredients Transfer the ribs to a large pan. Add the 4 ounces unsalted butter, 1/2 cup light brown sugar, 1/2 cup agave syrup or honey, and enough BBQ sauce to coat the ribs well, using at least 1/2 cup and up to 1 cup. Toss everything together until the ribs are evenly coated and glossy.

6-Sixth Step: Cover and finish cooking Cover the pan tightly with foil and return it to the grill at 275ยฐF. Continue cooking until the ribs are tender and the internal temperature reaches about 207ยฐF. This usually takes 30 to 45 minutes. The foil helps trap steam and keeps the ribs juicy while the sauce thickens around them.

7-Seventh Step: Toss, rest, and serve Remove the pan from the grill and toss the ribs again in the sauce. Move them to a serving platter and let them rest briefly before serving. This final rest helps the juices settle so each bite stays tender and rich. Serve them hot with extra BBQ sauce on the side if you like more heat or sweetness.
