  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

– 1 pound (450 grams) dried spaghetti

– 1/2 cup (120 ml) high-quality extra virgin olive oil

– 6 to 8 cloves garlic, thinly sliced

– 1/2 teaspoon crushed red pepper flakes

– Chopped fresh parsley (optional)

– Freshly grated Parmesan cheese (optional)

– Salt, to taste

Instructions

1-Bring a large pot of salted water to a boil and cook 1 pound of spaghetti until al dente, about 8-10 minutes; adjust for gluten-free pasta if needed.

2-Heat 1/2 cup extra virgin olive oil in a pan over medium heat, add 6-8 thinly sliced garlic cloves, and sautΓ© until golden and fragrant, roughly 2 minutes.

3-Stir in 1/2 teaspoon red chili flakes for 30 seconds to release their flavor.

4-Drain the spaghetti, reserving some pasta water, and add it to the pan with the garlic and oil mixture.

5-Toss everything together, adding reserved pasta water bit by bit to create a silky sauce that coats the strands perfectly; use an extra 1/4 cup if needed.

6-Mix in chopped fresh parsley and season with salt to taste before serving immediately, perhaps with a sprinkle of Parmesan.
