πŸ₯© Slow Cooker French Dip Sandwiches with Savory Au Jus Sauce provide tender, flavorful beef that melts in your mouth, making for a comforting and satisfying meal.
🍞 The rich au jus dipping sauce elevates these sandwiches, creating an irresistible combination perfect for gatherings or weeknight dinners.

  • Total Time: 5 hours 25 minutes (Slow Cooker) or approximately 2 hours (Instant Pot)
  • Yield: 4-6 sandwiches

Ingredients

– 2-3 pounds beef chuck or rump roast, trimmed of excess fat

– 3 cups low sodium beef broth

– 1/4 cup Worcestershire sauce

– 2 tablespoons extra virgin olive oil

– 2 yellow onions, quartered and thinly sliced

– 3 cloves garlic, minced

– 1 bay leaf

– Salt and pepper to taste

– 4-6 crusty rolls

– 8-12 slices cheese (provolone, swiss, havarti, or monterey jack)

Instructions

1-First, prepare all ingredients by trimming the beef of excess fat and seasoning it liberally with salt and pepper. This step, as outlined in the directions, sets the foundation for maximum flavor.

2-Next, heat the olive oil in a pot over medium-high heat and sear the roast on all sides until a brown crust forms it’s optional but adds that extra punch!

3-Once seared, reduce the heat and cook the sliced onions and minced garlic until softened, using a few tablespoons of the beef broth mixture to scrape up those tasty browned bits.

4-For the slow cooker method, transfer everything to your device, pour in the remaining broth mixture, add the bay leaf, and cook on high for 3-4 hours or low for 5-6 hours until the meat is tender.

5-If you’re using an Instant Pot, seal and cook on high pressure for 60 minutes, followed by a 20-minute natural release.

6-After cooking, remove the meat, let it rest, then shred or slice it before straining the au jus.

7-Return the meat and onions to the cooker, add some au jus for moisture, and assemble your sandwiches by toasting rolls, adding beef, onions, and cheese, then melting everything in a 375Β°F oven.

Notes

πŸ”ͺ Choose beef cuts based on preference; fattier cuts add flavor but can be trimmed.
πŸ₯« Store leftover meat and onions separately from au jus in the refrigerator for up to 3 days.
♨️ Reheat meat and onions separately with au jus, water, or broth to keep moist before assembling sandwiches.
πŸ”₯ Searing the meat is optional but develops rich flavor.
🍺 Try variations like adding mushrooms or substituting some beef broth with beer for different taste profiles.
