🥔 Enjoy the comforting, classic flavors of shepherd’s pie in a warm, hearty soup perfect for cozy meals.
🧀 This recipe combines creamy mashed potatoes, savory ground beef, and melty cheddar for satisfying comfort in every bowl.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

– 4 large russet potatoes (about 2 lbs)

– ¾ teaspoon salt

– ¾ cup sour cream

– 1 lb ground beef (85% lean)

– 1 diced yellow onion

– 3 minced garlic cloves

– 3 tablespoons salted butter (divided)

– ¼ cup flour

– 4 cups chicken broth

– 2 cups half and half

– ¾ teaspoon Worcestershire sauce

– 2 teaspoons Italian seasoning

– ½ teaspoon mustard powder

– ¼ teaspoon ground sage

– 2 cups shredded cheddar cheese

– 1 ½ cups mixed frozen vegetables

– Salt and pepper to taste

Instructions

1-First, wash, peel, and chop your potatoes, onion, and garlic. This prep work, often called mise en place, helps everything cook evenly and saves time later.

2-Once that’s done, heat a large pot over medium heat and add some of the butter to melt it down.

3-Next, brown the ground beef in the pot, breaking it up as it cooks until it’s no longer pink. This step builds that savory base you’ll love. Stir in the diced onion and minced garlic, sautéing them for about 5 minutes until they soften and release their flavors.

4-Then, sprinkle in the flour to thicken the mix, stirring it well for a minute or two. Pour in the chicken broth and half and half, along with the Worcestershire sauce, Italian seasoning, mustard powder, and ground sage. Bring it to a boil, then simmer to let the flavors meld together.

5-After that, add the chopped potatoes and mixed frozen vegetables, cooking until the potatoes are tender. Finally, stir in the sour cream and shredded cheddar cheese until everything is creamy and combined. Taste and adjust with salt and pepper as needed for that perfect finish.
