Ingredients

– 1 pound breakfast sausage

– 24 large eggs

– 1 medium onion, chopped

– 1 medium red bell pepper, diced

– 1 teaspoon salt

– 1/2 teaspoon garlic powder

– 1/2 teaspoon black pepper

– 1 1/2 cups cheddar cheese, divided

Instructions

1-Preheat oven to 350ยฐF (175ยฐC).

2-Cook the sausage in a large skillet until fully cooked, then drain and set aside.

3-In a large bowl, whisk the eggs. Add the chopped onion, diced red bell pepper, salt, garlic powder, black pepper, cooked sausage, and 1 cup of cheddar cheese. Mix well.

4-Spray two 12-cup muffin tins with cooking spray.

5-Fill each muffin cup with 1/3 cup of the egg mixture.

6-Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the tops.

7-Bake for 20 to 25 minutes, until the muffins are set.
