Ingredients

– 1 lb peeled and diced peaches for mousse provides fresh flavor and base

– 1 cup heavy whipping cream

– 1 ripe peach peeled and thinly sliced for garnish

Instructions

1-Peel and dice the peaches, then place them in a blender or food processor. Add the lemon juice to keep them from browning, and blend until you have a smooth puree. Keep this in the blender until you’re ready for the next step.

2-In a small saucepan, add the cold water and sprinkle the gelatin on top. Let it sit for 5 minutes to soften, then stir in the granulated sugar and warm over medium heat until the sugar dissolves, about 1-2 minutes. Remove from heat immediately to avoid overcooking.

3-Add the gelatin mixture to the fruit puree in the blender and blend until fully combined. Cover and chill in the refrigerator for about 2 hours, or until it begins to thicken.

4-Beat the heavy whipping cream until stiff peaks form, creating that airy texture for your peach mousse with fresh fruit flavor. Gently fold the whipped cream into the thickened puree until smooth and well-mixed.

5-Divide the mixture evenly among 6 ramekins or serving glasses and refrigerate until fully set. For the topping, combine the sliced peach, granulated sugar, and lemon juice in a small saucepan. Heat over medium-high, stirring until the sugar dissolves, then bring to a boil and simmer for 2 minutes. Cool completely before spooning over the mousse and garnishing with mint leaves if you like.
