Ingredients
1 seedless sweet orange with skin adds natural zest and moisture
3 large eggs at room temperature helps bind and enrich the batter
1/3 cup (80 ml) olive oil provides healthy fats and a fruity depth
1/2 cup (100 g) granulated sugar offers sweetness
1/4 cup (50 g) granulated sugar for more sweetness if you like it extra indulgent
2 cups (250 g) self-rising flour gives the cake its light, fluffy rise
Instructions
1- Blend the whole orange, olive oil, eggs, and sugar until smooth to create a flavorful base.
2- Pour the blended mixture into a bowl, then gently whisk in the self-rising flour without over-mixing this keeps the cake light and airy, just like in my own bakes.
3- Transfer the batter into a greased and floured 13Γ23 cm (9Γ13 inch) silver-colored loaf pan for even baking without too much browning.
4- Bake at 340ΒΊF (170ΒΊC) on the lower two-thirds rack with both upper and lower heat for about 40 minutes, or until a skewer inserted in the center comes out nearly clean.
5- Let the cake cool completely in the pan before slicing and serving to lock in that perfect texture.
