Instructions
1-First Step: Prepare the dough Roll out 1 lb pizza dough to 1/8-inch thickness on a floured surface. Use a 4-inch biscuit cutter to make 12-16 circles. Keep them covered with a damp cloth to prevent drying.
2-Second Step: Add fillings Spoon 1 tablespoon pizza sauce onto each circle’s center. Top with 2 tablespoons shredded mozzarella, a few pepperoni slices or sausage bits, and diced onions or peppers if using. Leave a 1/2-inch border empty.
3-Third Step: Seal the pockets Fold dough over fillings to form half-moons. Press edges with a fork to crimp and seal tightly. Poke small vents on top with a knife to release steam.
4-Fourth Step: Brush and season Beat 1 egg with 1 teaspoon water for egg wash. Brush over pockets. Sprinkle Italian seasoning lightly. Place on parchment-lined baking sheet.
5-Fifth Step: Bake Preheat oven to 425ยฐF. Bake 12-15 minutes until golden and puffed. For air fryer option, see below.
6-Air Fryer Method: Preheat to 375ยฐF. Spray basket with oil. Air fry 4-6 pockets 8-10 minutes, flipping halfway. Brush with garlic butter after for extra taste.
7-Final Step: Serve Cool 5 minutes. Dip in marinara sauce. Customize with sausage, mushrooms, or olives.
