Instructions

1-First, brush the 4 ears of fresh corn with olive oil and grill them on medium-high heat for about 10 minutes, turning occasionally until they’re nicely charred.

2-Let the corn cool a bit, then slice the kernels off the cobs using a sharp knife to get around 4 cups of kernels ready for mixing.

3-In a large bowl, combine the corn kernels with 1.5 tablespoons of mayonnaise, 1 minced garlic clove, the zest and juice of 1 lime, 1/3 cup chopped scallions, 1/4 cup Cotija or feta cheese, 1/4 cup finely chopped cilantro, 1/4 teaspoon smoked paprika, 1 diced jalapeรฑo, and 1/4 teaspoon sea salt.

4-Mix everything thoroughly to blend the flavors evenly, ensuring the creamy dressing coats every kernel.

5-Taste and adjust as needed, perhaps adding more lime for zing or salt for balance.
