Ingredients
2 lbs ground beef
1/2 medium yellow onion, diced
2 cloves garlic, minced
2 (1 oz.) packets taco seasoning
4 tablespoons tomato paste
2 (10 oz.) cans diced tomatoes with green chilies, drained
1 (15 oz.) can whole kernel corn, drained
1 (15 oz.) can black beans, drained
1 tablespoon chili powder
1 (16 oz.) can refried beans
12 corn tortillas
2 cups (8 oz.) Monterey Jack cheese, shredded
2 cups (8 oz.) cheddar cheese, shredded
Salt and pepper to taste
Optional toppings: avocado
tomatoes
red onions
jalapenos
cilantro
shredded lettuce
green onions
sour cream (add as desired)
Instructions
1-Brown the ground beef over medium-high heat, then drain the fat and set it aside.
2-Sautรฉ the diced onion in oil until soft, about 5 minutes, then add the minced garlic and cook for 30 seconds.
3-Return the beef to the pan, add the taco seasoning, tomato paste, and water as per the packet instructions. Simmer until the water reduces.
4-Stir in the drained diced tomatoes with green chilies, drained corn, drained black beans, chili powder, salt, and pepper. Simmer for 5 minutes, then adjust seasoning as needed.
5-In a separate bowl, mix the shredded Monterey Jack and cheddar cheeses.
6-In a 9ร13-inch casserole dish, layer 6 corn tortillas to cover the bottom.
7-Spread half of the refried beans over the tortillas, followed by half of the beef mixture, and then half of the cheese mixture.
8-Repeat the layers with the remaining 6 corn tortillas, refried beans, beef mixture, and cheese.
9-Bake uncovered at 350ยฐF for 30 minutes, or until the cheese is fully melted.
10-Let the casserole stand for 10 minutes before adding desired toppings, then serve warm.
