Instructions
1-First, rinse and drain 2 (15-ounce) cans of chickpeas under cold water to remove any excess sodium and improve their texture.
2-Next, dice 1 large cucumber and 1 red bell pepper into bite-sized pieces, then halve 2 cups of cherry tomatoes for even mixing.
3-In a large bowl, combine the prepared chickpeas, cucumber, red bell pepper, halved cherry tomatoes, ΒΌ cup diced red onion, 4 ounces crumbled feta cheese, and ΒΌ cup finely chopped parsley.
4-In a separate small bowl, whisk together the juice of one lemon with a couple of tablespoons of extra virgin olive oil to make the vinaigrette, adding salt and pepper as needed.
5-Pour this dressing over the salad mixture and gently toss everything to blend the flavors evenly.
