Ingredients

– 2 pounds (1 kg) boneless, skinless chicken thigh fillets

– 3 large garlic cloves, minced for the marinade

– 1 tablespoon white wine vinegar for the marinade

– 3 tablespoons lemon juice for the marinade

– 1 tablespoon extra virgin olive oil for the marinade

– 3 tablespoons full-fat Greek yogurt for the marinade

– 1 1/2 tablespoons dried oregano for the marinade

– 1 teaspoon salt for the marinade

– Black pepper to taste for the marinade

– 2 cucumbers grated and squeezed to remove excess juice for the tzatziki

– 1 1/4 cups full-fat Greek yogurt for the tzatziki

– 1 tablespoon lemon juice for the tzatziki

– 1 tablespoon extra virgin olive oil for the tzatziki

– 1 garlic clove, minced for the tzatziki

– 1/4 teaspoon salt for the tzatziki

– Black pepper to taste for the tzatziki

– 3 tomatoes, deseeded and diced for the salad

– 3 cucumbers, diced for the salad

– 1/2 red Spanish onion, finely chopped for the salad

– 1/4 cup fresh parsley leaves for the salad

– Salt and pepper to taste for the salad

– 4 to 6 pita breads or flatbreads to serve

Instructions

1-First: combine the marinade ingredients in a sealable bag, add the chicken, and massage it thoroughly to coat. Let it marinate for at least 2 hours, ideally 3 hours, for the best flavor, but not longer than 24 hours to avoid over-tenderizing.

2-Second: for the tzatziki, scrape the seeds from the cucumbers, grate them, and squeeze out the excess liquid. Mix the grated cucumber with yogurt, lemon juice, olive oil, garlic, salt, and black pepper, then set it aside for at least 20 minutes to let the flavors meld.

3-Third: combine the salad ingredients in a bowl and season with salt and pepper for a fresh, crisp topping.

4-Fourth: preheat your grill or grill pan to medium-high heat with a bit of oil. Remove the chicken from the marinade and cook for 2-3 minutes per side until golden brown and cooked through. If the thighs are large, cut them into smaller pieces for easier handling.

5-Fifth: let the chicken rest covered loosely for 5 minutes to lock in the juices. Warm the pita breads, then layer them with salad, chicken, and tzatziki, rolling tightly in parchment paper or foil to secure.
