Instructions
1-Gathering and Mixing the Ingredients: First, drain and pat dry the 8 ounces of fresh ciliegine mozzarella balls to remove excess moisture. In a medium jar, mix the 2 tablespoons of chopped fresh parsley and/or basil leaves with 2 tablespoons of lemon juice, 2 teaspoons of lemon zest, 1 grated clove of garlic, 1/4 teaspoon of red pepper flakes if you like some heat, and 1/4 teaspoon of sea salt. Add about half of the 2/3 cup extra-virgin olive oil and stir it all together for a tasty base.
2-Marinating the Cheese: Next, add the mozzarella balls to the jar and pour the remaining olive oil over them until theyβre fully covered. If needed, add a little more oil to submerge everything. Seal the jar, pop it in the fridge, and let it sit for at least one hour. This marinating time lets the flavors blend, making each bite even better. Before serving, give it a taste and tweak the seasoning if you want more zing.
