ΒΌ cup granulated sugar (which can be adjusted or replaced with sugar substitutes like erythritol or stevia)

1 cup water

2 teaspoons salt

Β½ teaspoon coarse black pepper, or to taste

2 tablespoons vegetable oil (preferably high-quality extra virgin olive oil)

Β½ teaspoon dried basil

Β½ teaspoon dried parsley

Instructions

1-In a mixing bowl, combine the sliced onions, chopped tomatoes, sliced cucumbers, sugar, water, vinegar, oil, and dried herbs. Mix everything well and season with salt and pepper.

2-Refrigerate the mixture for at least 2 hours to allow the flavors to marinate.

3-Before serving, let it come to room temperature.

4-Serve with or without the dressing, paired with grilled meats or other dishes as desired.
