๐Ÿ— It combines lean protein and nutrient-packed asparagus with a zesty lemon-herb sauce for a healthy and satisfying dish.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

– 2 pounds (4 pieces) boneless, skinless chicken breasts for a hearty meal

– 2 teaspoons Herbs de Provence adds aromatic herbal notes

– 1 minced garlic clove brings a fresh, pungent flavor

– 2 tablespoons olive oil used for roasting and moisture

– 1 tablespoon honey or maple syrup provides a touch of sweetness

– 1 tablespoon lemon zest infuses bright citrus aroma

– 1/4 cup freshly squeezed lemon juice (from 1 lemon) delivers tangy zest

– 2 teaspoons sea salt (or to taste) seasons the dish perfectly

– 1/2 teaspoon freshly ground black pepper adds a bit of heat

– 1.5 pounds (1 bunch) asparagus contributes crisp, green freshness

– 1 lemon sliced thinly for topping and extra flavor

– 1 lb baby potatoes, halved for heartiness

Instructions

1-Preheat the oven to 400ยฐF (204ยฐC) and line a baking sheet with parchment paper for easy cleanup.

2-Place the 2 pounds of boneless, skinless chicken breasts evenly on the baking sheet to ensure they cook uniformly.

3-In a small bowl, whisk together 2 teaspoons Herbs de Provence, 1 minced garlic clove, 2 tablespoons olive oil, 1 tablespoon honey or maple syrup, 1 tablespoon lemon zest, 1/4 cup freshly squeezed lemon juice, 2 teaspoons sea salt, and 1/2 teaspoon freshly ground black pepper to create the sauce.

4-Pour half of the mixture over the chicken and bake for about 20 minutes until the chicken is nearly cooked through.

5-Trim the 1.5 pounds of asparagus by snapping off the ends to remove the tough parts.

6-Remove the chicken from the oven, arrange the asparagus around the edges, drizzle the remaining sauce over the pan, and place the thinly sliced lemon on top of the chicken and asparagus.

7-Broil on a low setting for about 10 minutes until the asparagus is crisp-tender and the chicken is golden brown and cooked through. Serve immediately for the best flavor.

๐Ÿง„ Use fresh minced garlic instead of jarred for better flavor.
๐Ÿฏ Honey is optional and can be omitted for a less sweet sauce.
โ„๏ธ Store leftovers in a sealed container in the refrigerator for up to 4 days; reheat gently.
๐Ÿฅถ Freeze cooked chicken without asparagus for up to 3 months for meal prep.
