🍲 This Leftover Ham Casserole transforms leftover ham into an easy, comforting family dinner packed with vegetables and cheesy goodness.
πŸ§€ It’s a quick and versatile recipe perfect for busy nights when you want a hearty, satisfying meal with minimal effort.

  • Total Time: 55 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale

1 1/2 cups cooked macaroni

2 cups water

1/2 cup chopped onion

1 (10 ounce) can low-fat cream of mushroom soup

2 cups chopped broccoli

1 1/2 cups shredded cheese

Pepper to taste

1/8 to 1/4 cup additional shredded cheese for topping

Ham, as needed (use your leftover ham to fill about 2 cups diced for the best results)

Instructions

1-First, preheat your oven to 400 degrees Fahrenheit. Gather and prepare your ingredients, such as dicing the ham and steaming the broccoli until it’s tender-crisp.

2-Set aside 1/2 cup of the shredded cheese for the topping to add a nice golden finish later.

3-In a lightly sprayed casserole dish, combine the 1 1/2 cups cooked macaroni, 2 cups steamed broccoli, 1/2 cup chopped onion, 1 (10 ounce) can low-fat cream of mushroom soup, ham as needed, 1 cup shredded cheese, and pepper to taste.

4-Stir everything well to mix evenly, making sure the sauce coats all the ingredients for maximum flavor.

5-Spread the reserved 1/2 cup shredded cheese on top, then bake for 30 to 35 minutes until it’s hot and bubbly.

6-Once done, let it rest for a few minutes before serving to let the flavors blend.
