Ingredients

– 1/3 cup cocoa powder

– 1/2 cup milk

– 2 cups desiccated coconut

Instructions

1-First Step: Prepare the Mise en Place Gather all ingredients for homemade lamingtons. Soften butter at room temp. Sift flour and cocoa separately to avoid lumps. Measure desiccated coconut into a wide bowl.

2-Second Step: Bake the Sponge Cake Cream 125g butter and 1 cup sugar until pale, about 3 minutes. Beat in 2 eggs one at a time, then vanilla. Fold in 1.5 cups self-raising flour alternately with 1/2 cup milk. Pour into pan, bake 25-30 minutes until golden and springs back. Cool completely. Cut into 16 even 2-inch squares.

3-Third Step: Make the Chocolate Icing Melt 125g butter in a saucepan over low heat. Sift in 250g icing sugar and 1/3 cup cocoa. Gradually stir in 1/2 cup milk until smooth, glossy. Simmer 1-2 minutes, cool to lukewarm.

4-Fourth Step: Freeze the Cake Squares Place sponge squares on a tray, freeze 30 minutes.

5-Fifth Step: Dip and Coat Work in batches. Use two forks to dip each square in icing, fully coat. Let excess drip, then roll in desiccated coconut, pressing gently. Place on a wire rack over parchment. Repeat for all.

6-Final Step: Drying and Serving Let dry 1-2 hours until set. Enjoy as is or with tea.
