Ingredients

– 3 large eggs

– 1/2 cup softened unsalted butter

– 1/2 cup Greek yogurt or sour cream

– 1/4 cup milk (unsweetened coconut milk preferred; almond or whole milk also works)

– 1 teaspoon vanilla extract

– 1 1/2 cups blanched almond flour (not almond meal)

– 1/4 cup coconut flour

– 1/3 cup granulated sweetener (monk fruit sweetener or allulose recommended)

– 1 teaspoon baking powder

– Pinch of salt

– Optional: frosting or glaze made from powdered sweetener with vanilla extract and milk

Instructions

1-Preheat oven to 350ยฐF (180ยฐC). Grease a loaf pan and line it with parchment paper to prevent sticking.

2-In a large bowl, whisk together 3 large eggs, 1/2 cup Greek yogurt or sour cream, 1/2 cup softened unsalted butter, 1/4 cup milk, and 1 teaspoon vanilla extract until fully combined.

3-Gently fold in the dry ingredients: 1 1/2 cups blanched almond flour, 1/4 cup coconut flour, 1/3 cup granulated sweetener, 1 teaspoon baking powder, and a pinch of salt until everything is mixed well.

4-Pour the batter into the prepared loaf pan and smooth the top for even baking.

5-Bake for 50 minutes or until a skewer inserted comes out mostly clean.

6-Let the cake cool briefly in the pan, then transfer it to a wire rack to cool completely.

7-If using frosting or glaze, apply it after cooling and refrigerate for 30 minutes to set before slicing.
