Instructions
1-Preheat oven to 350ยฐF (180ยฐC). Grease a loaf pan and line it with parchment paper to prevent sticking.
2-In a large bowl, whisk together 3 large eggs, 1/2 cup Greek yogurt or sour cream, 1/2 cup softened unsalted butter, 1/4 cup milk, and 1 teaspoon vanilla extract until fully combined.
3-Gently fold in the dry ingredients: 1 1/2 cups blanched almond flour, 1/4 cup coconut flour, 1/3 cup granulated sweetener, 1 teaspoon baking powder, and a pinch of salt until everything is mixed well.
4-Pour the batter into the prepared loaf pan and smooth the top for even baking.
5-Bake for 50 minutes or until a skewer inserted comes out mostly clean.
6-Let the cake cool briefly in the pan, then transfer it to a wire rack to cool completely.
7-If using frosting or glaze, apply it after cooling and refrigerate for 30 minutes to set before slicing.
