2 tablespoons (28g) Cold butter, cubed

Instructions
1-Preheat oven: Preheat oven to 350ยฐF (175ยฐC). Line an 8ร8 inch pan with parchment paper, leaving overhang on sides for easy removal.
2-Make Crust: Combine melted butter, almond flour, and sweetener. Press firmly into the bottom of the prepared pan.
3-Bake Crust: Bake for 8 minutes or until lightly browned. Cool completely in the pan.
4-Make Cheesecake Layer: Beat softened cream cheese, egg yolk, sweetener, and vanilla extract until smooth. Spread evenly over the cooled crust.
5-Make Strawberry Sauce: In a small saucepan, combine chopped strawberries, sweetener, and vanilla extract. Simmer over medium heat, stirring occasionally, until thickened (about 8-10 minutes). Cool completely before using.
6-Assemble: Spread the cooled strawberry sauce evenly over the cheesecake layer.
7-Make Crumble Topping: In a bowl, combine almond flour, crushed pecans, and sweetener. Cut in cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs. Sprinkle evenly over the strawberry sauce.
8-Bake: Bake for 22-26 minutes, or until the topping is lightly browned and the bars are set (center should not be jiggly).
9-Cool & Slice: Cool completely in the pan on a wire rack. For cleaner slices, chill in the freezer for 15 minutes before cutting. Use the parchment overhang to lift the bars out of the pan before slicing.
