🍠 This Ground Turkey and Sweet Potato Skillet delivers a nutritious and hearty meal packed with protein and vitamins.
⏱️ Perfect for a quick dinner, it combines simple ingredients and easy preparation for a comforting, flavorful dish.

  • Total Time: 27 minutes
  • Yield: 4 servings

Ingredients

– 2 tablespoons extra virgin olive oil or neutral oil like avocado oil

– 1 pound extra-lean ground turkey (can substitute ground beef or ground chicken with extra moisture such as broth)

– 1 teaspoon minced garlic cloves

– ½ cup diced onions

– ½ cup diced yellow pepper (red or orange peppers can also be used)

– 1½ cups diced large sweet potato (small enough to cook evenly)

– Salt and freshly ground black pepper to taste

– Red chili flakes (optional, for heat)

– ½ cup shredded mozzarella cheese (omit for certain diets; alternatives like Pepper Jack or Habanero Cheddar can be used)

– Fresh parsley (optional, for garnishing)

Instructions

1-Heat the olive oil in a cast iron skillet or large pot over medium-high heat. This step builds a flavorful base for your dish.

2-Add the 1 pound of ground turkey and 1 teaspoon of minced garlic cloves, breaking up the turkey with a wooden spoon, and cook for about 5 minutes, stirring occasionally until it’s browned.

3-Stir in the ½ cup of diced onions and ½ cup of diced yellow pepper, and cook until the onions soften and release their aroma.

4-Mix in the 1½ cups of diced sweet potato, red chili flakes if you’re using them, salt, and pepper to taste. Cover the skillet and cook until the sweet potatoes are tender, stirring occasionally and adding a bit more oil or water if needed.

5-Preheat the oven to 400ºF. Once everything is tender, sprinkle the ½ cup of shredded mozzarella cheese on top and pop the skillet in the oven to melt the cheese.

6-Remove from the oven when the cheese has melted and garnish with fresh parsley if desired. Serve it up warm for the best experience.

Notes

🍳 Avoid overcrowding the skillet with sweet potatoes; use 2-3 cups for a 9-10 inch skillet.
🔥 Cover skillet and reduce heat to cook sweet potatoes faster or pre-cook them.
🌿 Add spices like cumin, paprika, or herbs, and vegetables like kale or broccoli for extra flavor and nutrition.
