Instructions

1-First, start by preparing the Cucumber Tomato Relish: combine 1 tablespoon olive oil, 1 tablespoon vinegar, 2 firm tomatoes (seeded and diced), 1 cucumber (seeded and diced), and 1/2 red onion (diced). Let it sit for at least one hour to let the flavors meld together. This step adds a fresh, tangy element to your Greek tacos.

2-Next, make the Feta Mint Tzatziki by mixing 1 cucumber (seeded, finely diced, and squeezed to remove moisture) with 1 cup whole-milk plain Greek yogurt, 1/2 cup crumbled feta cheese, 1 minced garlic clove, and 2 tablespoons minced fresh mint. Set it aside to chill while you handle the meat.

3-Then, for the Lamb or Turkey Filling, heat 1 tablespoon olive oil in a skillet and cook 1 1/2 pounds ground lamb, beef, or turkey with salt and pepper until browned. Remove the meat, then sauté 1/2 minced red onion in the pan juices. Add 2 teaspoons dried oregano and 4 minced garlic cloves, stir in 2 tablespoons tomato paste until it caramelizes, and deglaze with 4 tablespoons dry red wine or red wine vinegar. Return the meat to the pan and keep it warm.

4-After that, lightly toast 4 to 6 Greek pitas in a skillet with a drizzle of olive oil, about 20 seconds per side. To assemble, serve everything buffet-style with the relish, tzatziki, meat filling, and extra crumbled feta as desired.
