2 tablespoons (25g) granulated sugar
1 1/2 teaspoons yeast
3/4 teaspoon table salt
2 large eggs, at room temperature
1/4 cup (57g) water
6 tablespoons (85g) butter, cold
1/3 cup (67g) granulated sugar
3 tablespoons (63g) honey
2 tablespoons (35g) heavy cream
1 1/2 cups (129g) sliced almonds
2 teaspoons unflavored gelatin (about 2/3 of a packet or 3 to 4 sheets)
2 tablespoons (28g) water
1 cup (227g) heavy cream, whipped to very soft peaks
3-ounce package instant vanilla pudding mix
1 1/2 cups (340g) milk
1 teaspoon vanilla extract
Instructions
1-Combine all dough ingredients and mix, then knead until smooth and supple.
2-Place the dough in a lightly oiled bowl, cover, and let rise for 60 minutes until puffy.
3-Transfer the dough to a lightly oiled surface, fold to release gas, divide in half, shape into 8-inch circles, and place in lightly greased 8-inch cake pans.
4-Cover and let rise for 30 minutes, then stretch to reach edges. Prepare topping by melting butter, adding sugar, honey, and cream; bring to a boil for 3 to 5 minutes until light gold, stir in almonds, and cool slightly before spreading over dough.
5-Preheat oven to 350Β°F and bake for 25 to 28 minutes until edges are golden and topping bubbles. Cool in pans for 30 minutes, then invert onto plates and racks to cool fully.
6-Split each cake horizontally into two thin rounds.
7-Soften gelatin in water, heat until melted, and cool slightly. Fold into whipped cream, then mix with pudding prepared from milk and vanilla extract. Use this filling to layer the cakes.
8-Serve immediately or refrigerate.
