Instructions

1-Creating this French Style Potato And Green Bean Salad is straightforward and fun, starting with whisking up a tasty dressing that ties everything together. Begin by mixing 1/4 cup olive oil, 3 tablespoons grainy Dijon mustard, 2 tablespoons Sherry vinegar, 1 finely minced shallot, and 2 cloves garlic minced very fine in a bowl. Whisk vigorously until the dressing is thick and well emulsified, then add a pinch of salt to taste for that perfect balance.

2-Next, place 2 pounds of small fingerling potatoes in a large pot with 2 inches of cold water and 1 tablespoon salt. Bring it to a boil, then reduce the heat and simmer until the potatoes are tender. In the last 1 to 2 minutes, add 1/3 to 1/2 pound of green beans trimmed and cut in half to the pot. Once done, drain everything and slice the hot potatoes in half lengthwise or smaller if they’re large.
