πŸ₯© Experience the perfect tender and juicy filet mignon with a beautiful caramelized crust every time you cook.
πŸ”₯ This recipe offers a foolproof method to cook a restaurant-quality steak right at home, impressing any diner.

  • Total Time: 1 hour to 1 hour 30 minutes
  • Yield: 2 servings

Ingredients

– 2 Filet Mignons (6-8 ounces or approximately 170-225 grams each for American style)

– 2 Filet Mignons (3-4 ounces or approximately 85-115 grams each for European Petite style)

– Salt and ground black pepper to taste

– 1 tablespoon neutral cooking oil

– 2 tablespoons unsalted butter

– 5 cloves garlic peeled

– 4 sprigs fresh rosemary

Instructions

1-Step 1: Prep the Steaks Remove the filet mignons from the refrigerator 30 to 60 minutes before cooking. Unwrap and season them with salt and ground black pepper, then let them rest at room temperature on a plate. This step helps the meat cook evenly and stay juicy, avoiding any tough spots.

2-Step 2: Preheat and Heat Preheat the oven to 360Β°F (approximately 182Β°C), which gives you time to get everything ready. Heat a cast iron skillet over high heat for 3 to 5 minutes to get it nice and hot. Once it’s ready, add 1 tablespoon of neutral cooking oil to the pan.

3-Step 3: Sear the Steaks Sear the steaks for 2 to 3 minutes on each side for standard cuts, or 1 to 2 minutes per side for petite ones, until a brown crust forms and the meat lifts easily. Don’t move them around too much that’s how you get that perfect caramelized outside. If you’re curious about other quick recipes, our strawberry milkshake can be a fun, easy drink to pair with it.

4-Step 4: Add Flavors and Baste Take the skillet off the heat, then add 2 tablespoons of unsalted butter, 5 peeled garlic cloves, and 4 sprigs of fresh rosemary. Baste the steaks with the melted butter to infuse them with extra taste and keep them moist.

5-Step 5: Finish in the Oven Pop the skillet into the preheated oven for 2 to 8 minutes based on how you like your steak: 2 minutes for rare, 3-4 for medium-rare, 5 for medium, 6-7 for medium-well, and 8 for well done. After that, remove the steaks, tent them with foil, and let them rest for 5 to 10 minutes before serving with the pan juices. The total prep is about 10 minutes, cooking takes another 10 minutes, plus resting time, making the whole process around 1 hour and 10 to 30 minutes.

Notes

πŸ§„ Use fresh garlic cloves to maximize flavor during basting.
🌿 Choose a neutral oil for searing to avoid burning; reserve butter for finishing to enhance juiciness.
🌑️ Use a meat thermometer inserted from the side to accurately check steak doneness and avoid overcooking.
