Ingredients

– 1 1/2 cups (180g) chocolate chip cookie crumbs for the crust

– 3 tablespoons (42g) unsalted butter, melted for the crust

– 2 tablespoons (24g) granulated sugar for the crust

– 2 (8oz; 454g) packages cream cheese, softened for the filling

– 2/3 cup (130g) granulated sugar for the filling

– 2 teaspoons pure vanilla extract for the filling

– 2 large (100g) eggs, lightly beaten for the filling

– 1/4 cup (80g) dulce de leche, melted for the filling

Instructions

1-Preheat oven to 325ยฐF to get everything started on the right note.

2-For the crust: Combine the chocolate chip cookie crumbs, melted unsalted butter, and granulated sugar in a bowl, mix well, then press the mixture into the bottom and 1/4 inch up the sides of a greased 7-inch springform pan. Wrap the bottom and sides of the pan tightly with heavy duty aluminum foil and bake for about 10 minutes until golden brown, then let it cool.

3-For the filling: In a stand mixer, beat the softened cream cheese, granulated sugar, and pure vanilla extract for about 2 minutes until smooth and creamy. Scrape the sides of the bowl, add the lightly beaten eggs, and beat on medium-low until fully incorporated and fluffy, then pour the filling over the cooled crust.

4-Swirl the melted dulce de leche on top and gently swirl it with a knife for that beautiful marbled effect.

5-Bake by placing the springform pan in a larger baking pan and adding about 1 inch of hot water for a water bath. Bake for 45 to 50 minutes until the edges are set and slightly golden, with the center still jiggling slightly.

6-Cool by turning off the oven and cracking the door open; let the cheesecake cool inside for one hour, then cool it to room temperature and refrigerate for at least 4 hours or overnight before serving.
