Instructions
1-Preheat your oven: Preheat your oven to 350ยฐF and line a baking sheet with parchment paper.
2-Cream together: Cream together 1/2 cup butter, 1/3 cup granulated sugar, and 1/4 cup brown sugar until the mixture is light and fluffy, which takes about 2-3 minutes with a mixer.
3-Mix in egg and vanilla: Mix in 1 egg and 1 teaspoon vanilla extract until fully combined, creating a smooth base.
4-Add dry ingredients: Add 1 and 1/3 cups all-purpose flour, 1 cup finely crushed graham crackers, 1/4 teaspoon salt, 1/4 teaspoon baking soda, and 1/2 teaspoon baking powder; stir until no dry spots remain.
5-Scoop and shape dough balls: Scoop out 8 equal dough balls, roll them in 1/3 cup finely crushed graham crackers, place them on the baking sheet, and gently flatten each to about half an inch thick.
6-Bake: Bake for 10 minutes, then let them cool on the sheet for 10 minutes before moving to a rack.
7-Prepare frosting: Whip 4 ounces cream cheese and 4 tablespoons butter until smooth, add 1 cup powdered sugar and 1 teaspoon vanilla extract, and beat on high for 2-3 minutes until fluffy.
8-Finish cookies: Pipe the frosting on each cookie, top with 1/4 cup caramel sauce, and sprinkle with sea salt.
