Instructions
1-Melt the 2 cups (4 sticks) salted butter in a large pot over medium heat. Add the 6 finely chopped green onions and cook, stirring, until they’re tender, about 3 minutes. Then, stir in the ½ cup all-purpose flour until it’s fully incorporated this builds the base.
2-Add the 1 pound crawfish meat, 1 ½ pounds raw shrimp, ½ pound crab meat, 4 cups heavy cream, 4 cups half and half, 1 (14.75-ounce) can creamed corn, 1 ½ teaspoons Creole seasoning, 1 teaspoon Old Bay seasoning, 1 teaspoon kosher salt, 2 teaspoons freshly cracked black pepper, and 1 teaspoon cayenne pepper. Bring everything to a simmer over medium-high heat, stirring often to mix the flavors.
3-Lower the heat to medium-low and cook while stirring regularly until the bisque thickens and the flavors blend perfectly, about 40 minutes. Keep an eye on it so it doesn’t stick that’s where the magic happens!
4-Serve it up by ladling into bowls, and if you like, garnish with the ¼ cup minced fresh chives. Pair with some crusty bread for dipping, and you’re all set for a meal that’ll wow everyone.
