Ingredients
– 2 tablespoons extra virgin olive oil
– 1/4 cup heavy cream
– Salt and pepper to taste
– 1 pound of your favorite pasta, cooked
– Fresh basil pesto (homemade or purchased)
– 12 oz pasta (preferably penne or fusilli)
– 2 cups fresh basil leaves
– 1/3 cup pine nuts
– 2 cloves garlic
– 1/2 cup grated Parmesan cheese
– 1/2 cup olive oil
– 1/2 cup heavy cream or cashew cream (for vegan option)
Instructions
1-Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually 8-10 minutes.
2-While the pasta cooks, prepare the pesto sauce by blending fresh basil leaves, pine nuts, garlic, Parmesan cheese, and olive oil in a food processor until smooth.
3-In a saucepan over medium heat, warm the heavy cream, then stir in the prepared pesto sauce and cook for 2-3 minutes until it’s heated through and slightly thickened.
4-Drain the pasta, reserving a small cup of pasta water, and add the pasta to the saucepan with the sauce, tossing to coat. Use the reserved water to adjust consistency as needed.
5-Garnish with extra pine nuts, fresh basil leaves, and a sprinkle of Parmesan if desired, then serve immediately.
