Ingredients
– 1 1/2 tablespoons olive oil
– 2 finely minced garlic cloves
– 1 finely chopped onion
– 500g (1 lb) lean ground beef (90% or 95% lean)
– 2 teaspoons Italian herbs (a mix of dried oregano, basil, and parsley)
– 2 tablespoons tomato paste
– 400g (14 oz) canned crushed tomatoes or tomato passata
– 1/2 teaspoon red pepper flakes (optional)
– 1 1/2 teaspoons cooking or kosher salt
– 1/2 teaspoon black pepper
– 4 cups (1 liter) low sodium chicken stock or broth
– 350g (12 oz) short pasta such as fusilli, penne, or elbow macaroni (can increase up to 400g or 14 oz; break long pasta in half)
– 3/4 cup thickened or heavy cream
– Grated Parmesan cheese for serving
– Chopped parsley for garnish (optional)
Instructions
1-First, heat 1 1/2 tablespoons of olive oil in a large heavy-based pot over high heat.
2-Next, sautΓ© the 2 finely minced garlic cloves and 1 finely chopped onion for about 1 1/2 minutes until theyβre fragrant and soft.
3-Add the 500g of lean ground beef and cook it, breaking it up with a spoon, until no pink remains this usually takes a few minutes.
4-Stir in 2 teaspoons of Italian herbs and cook for 30 seconds to let their aroma shine.
5-Mix in 2 tablespoons of tomato paste and cook for 1 minute to get rid of that raw taste.
6-Pour in 400g of canned crushed tomatoes, 4 cups of low sodium chicken stock, 1 1/2 teaspoons of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of red pepper flakes if youβre using them.
7-Add 350g of short pasta, bring everything to a simmer, and cook for 15 minutes, stirring often towards the end to avoid sticking. The pasta should be almost done, and the sauce nice and saucy.
8-Finally, stir in 3/4 cup of heavy cream and simmer for 1 to 2 minutes. Remove from heat, give it a good stir, and serve topped with grated Parmesan cheese and optional chopped parsley.
