– 1/2 teaspoon red pepper flakes optional, for the herb sauce

Instructions

1-Prepare all ingredients: Trim the 3.5 to 4 pounds whole chicken, preferably kosher and spatchcocked, and gather the fresh herbs, green onions, garlic, lemon zest, and other items.

2-Mix the herb sauce: Combine 1 cup fresh herbs, 2 green onions, 2 garlic cloves (grated or minced), lemon zest from 1 lemon, and optionally 1 to 2 tablespoons lemon juice with 6 tablespoons olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and optionally 1/2 teaspoon red pepper flakes.

3-Season the chicken: Rub it with olive oil, salt, pepper, and paprika for that flavorful base. Let it rest in the herb sauce for deeper taste.
