Ingredients
3 cups all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons active dry yeast
1/2 teaspoon salt
2 ounces unsalted butter
1/3 cup whole milk
1/4 cup water
2 large eggs at room temperature
1 teaspoon pure vanilla extract
1 cup granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon fresh ground nutmeg
2 ounces unsalted butter, melted until browned
Instructions
1-First, whisk together 2 cups of all-purpose flour, 1/4 cup granulated sugar, 2 1/4 teaspoons active dry yeast, and 1/2 teaspoon salt in a large bowl. This sets the base for your dough and gets the yeast ready to work its magic. Next, whisk the 2 large eggs separately and set them aside for later use.
2-Melt the 2 ounces of unsalted butter with 1/3 cup whole milk, then stir in 1/4 cup water and 1 teaspoon pure vanilla extract. Make sure this mixture hits 110-115Β°F to activate the yeast without killing it. Pour this warm mix into your dry ingredients and stir well, then add the eggs and keep mixing until everything combines smoothly.
3-Stir in the remaining 3/4 cup all-purpose flour; the dough will be sticky, which is exactly how it should be. Place the dough in a greased bowl, cover it, and let it rise in a warm spot until it doubles in size, about 1 hour. For an even better flavor, you can refrigerate it overnight after this rise.
4-Once your dough has risen, prepare the filling by mixing 1 cup granulated sugar, 2 teaspoons ground cinnamon, and 1/2 teaspoon fresh ground nutmeg. Melt another 2 ounces of unsalted butter until itβs browned for that extra depth of flavor. Grease and flour a 9x5x3-inch loaf pan to get ready for shaping.
5-Deflate the dough and knead in about 2 tablespoons of flour to make it easier to handle, then let it rest. Roll the dough out on a lightly floured surface into a 12Γ20 inch rectangle. Spread the melted butter over it and sprinkle the filling mixture generously on top.
6-Cut the dough vertically into six strips, stack them, and then cut into six sections to make 36 squares. Layer these squares in your prepared loaf pan. Cover and let them rise again for 30 to 45 minutes until almost doubled in size.
7-Preheat your oven to 350Β°F and bake the bread for 30 to 35 minutes until itβs golden brown and fully cooked. Let it cool for 20 to 30 minutes, then run a knife around the edges, invert it onto a board, and flip it right side up. Serve it warm for the best experience these layers pull apart so easily and taste amazing.
