– 1 tablespoon butter
– 3 garlic cloves, finely chopped
– 1 tablespoon fresh rosemary leaves, roughly chopped (can substitute with thyme or sage)
– 3/4 cup cream (prefer single or light cream for best texture)
– 1 teaspoon black pepper
– 1 tablespoon lemon juice
– 50 grams freshly grated parmesan cheese
– Lemon zest and extra rosemary for garnish
– Tofu or chickpeas for vegan diets
– Gluten-free pasta for gluten-sensitive eaters

Instructions
1-Cook pasta in well salted boiling water, undercook by one minute. Reserve a cup of pasta water before draining.
2-Flatten chicken breast to an even thickness of about 1 to 1.5 cm using a rolling pin.
3-Season chicken well with salt and pepper on each side, then dust with flour.
4-Heat olive oil in a frying pan over medium-high heat, fry chicken for 2 minutes each side or until cooked through. Lightly wrap in foil and set aside.
5-Melt butter in the same pan over medium heat, gently fry garlic for one minute without browning.
6-Add rosemary and cook for 30 seconds.
7-Pour in cream and bring to a very gentle simmer, avoid boiling.
8-Gradually add parmesan in 2 to 3 parts, allowing it to melt between additions.
9-Stir in black pepper and lemon juice quickly.
10-Add a quarter cup of reserved pasta water and simmer for 2 to 3 minutes to thicken slightly.
11-Add cooked pasta, toss it in the sauce and let it simmer gently for one to two minutes.
12-Slice chicken and serve on top of or mixed through the pasta.
13-Garnish with extra rosemary, lemon zest, and additional parmesan if desired.
