340 grams (12 ounces) mild Mexican style chicken sausage, sliced into ½ inch pieces
1 large white onion, thinly sliced
2 large sweet bell peppers (red, orange, or yellow), thinly sliced
60 ml (¼ cup) water
Juice of 1 lime, plus additional wedges for serving
2 tablespoons roughly chopped cilantro
Corn or flour tortillas, warmed (gluten-free if desired) or lettuce leaves as a low-carb alternative
Optional toppings: shredded cheese, sour cream, pico de gallo, salsa, avocado, guacamole, jalapenos
1 teaspoon smoked paprika for taco seasoning
1 teaspoon cumin for taco seasoning
½ teaspoon chili powder for taco seasoning
½ teaspoon powdered garlic for taco seasoning
½ teaspoon oregano for taco seasoning

½ teaspoon pepper for taco seasoning
Instructions
1-Heat 1 tablespoon olive oil over medium-high heat. Add the sliced onions and sauté for 3 minutes.
2-Add the sliced bell peppers and cook for another 3 to 4 minutes.
3-Stir in the sliced chicken sausage, taco seasoning spices, and ¼ cup (60 ml) water. Sauté for an additional 3 minutes.
4-Squeeze lime juice over the skillet contents, sprinkle with chopped cilantro, and serve with warmed tortillas or lettuce leaves. Add desired toppings and enjoy.
