– 2 cups chopped cilantro (coriander) herbs like parsley and cilantro provide freshness and balance

– 1 cup chopped celery leaves

Instructions
1-Gathering your ingredients is the first fun part of making Caribbean Green Seasoning, and it only takes about 10 minutes total. Start by washing all the herbs and peppers thoroughly, especially the cilantro, to get rid of any dirt, then let them air dry. Once that’s done, roughly chop the herbs, garlic, and peppers, and remember to remove the woody stems from the thyme so you’re only using the tender parts.
2-Next, in a food processor or blender, add half of the ingredients along with half of the olive oil and pulse until they’re combined but still textured. This keeps the seasoning from becoming too smooth and losing its charm. Scrape down the sides, then mix in the rest of the ingredients and oil, blending to a thick consistency that holds some texture don’t go for fully liquid.
3-After blending, transfer the mixture to clean glass jars, leaving about 1 cm of space at the top for expansion. Store it in the back of the refrigerator for up to 6 months, or freeze it in ice cube trays for easy use later. This method makes it perfect for meal prep, and I always feel accomplished when I have a batch ready, just like when I prepare family favorites.
