– 1/2 teaspoon finely chopped fresh rosemary

– 1/2 teaspoon ground cinnamon

– 1/2 teaspoon ground cumin

– A pinch of kosher salt

– Freshly ground black pepper to taste

– Grapeseed or other high-heat oil for brushing as needed

– A small handful of arugula

– 1 brioche bun sliced in half and toasted

– French fries or potato chips for serving as desired

– Ground beef brisket

– Strong blue cheese

Instructions

1-Prepare the beef mixture: by gently combining 1/4 pound ground beef, 1 tablespoon grated white onion, 1 teaspoon Worcestershire sauce, 1/2 teaspoon finely chopped rosemary, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cumin, a pinch of kosher salt, and black pepper in a bowl.

2-Form the mixture into a single patty: sized to your bun, and press a shallow spot in the center to help it cook evenly.

3-Brush the patty: with high-heat oil and cook on a hot griddle for 3 minutes per side for medium-rare, then let it rest for 5 minutes.

4-For assembly: add arugula to the toasted bun, place the warm patty on top, spread the mayo on the other half, and serve with fries.
