1 lb Mafaldine noodles (approximately 450 grams) or alternatives like fettuccine or linguine, cooked al dente

2 tablespoons smoked paprika part of the homemade blackened seasoning blend

1 tablespoon cayenne pepper for the heat in the seasoning blend

1 tablespoon onion powder adds depth to the seasoning

2 teaspoons garlic powder enhances the flavor in the seasoning mix

1 teaspoon ground black pepper for a bit of spice in the blend

1 teaspoon salt balances the flavors in the seasoning

½ teaspoon dried thyme brings herbal notes to the seasoning

½ teaspoon dried oregano adds earthy flavor to the mix

Instructions

1-Prepare all ingredients first: Measure out the homemade blackened seasoning blend, mince 6 to 8 cloves of garlic, and bring a large pot of salted water to a boil for the pasta.

2-Cook the 1 lb of Mafaldine noodles or alternatives until al dente, then drain and reserve about one-third cup of pasta water to adjust the sauce later.

3-Coat the 3 chicken breasts evenly with 4 tablespoons of olive oil and 4 tablespoons of the blackened seasoning blend.

4-Heat a skillet over medium-high and sear the chicken until a dark crust forms, then finish cooking with 6 tablespoons of butter and the minced garlic.

5-In the same skillet, melt additional butter and sauté more minced garlic until fragrant, then add 2 cups of heavy whipping cream and some blackened seasoning.

6-Let the sauce simmer and thicken, stirring in 1.5 cups of shredded Parmesan cheese until smooth, and mix in the reserved pasta water for the right consistency.

7-Slice the rested chicken and toss it with the cooked noodles in the sauce, finishing with an optional sprinkle of Cajun seasoning for extra flavor.

8-Serve immediately, garnished as desired, adapting for dietary needs like using vegan cream if necessary.
