Ingredients

– 6 strips uncooked bacon, cut into small pieces

– 3 tablespoons butter (unsalted or salted)

– 1 medium yellow onion, chopped (about 1.5 cups or 200g)

– 3 large garlic cloves, minced

– 1/3 cup all-purpose flour (42g)

– 2 1/2 pounds gold potatoes, peeled and diced into pieces no larger than 1 inch (about 6 large potatoes or 1.15 kg)

– 4 cups chicken broth (945 ml)

– 2 cups milk (475 ml)

– 2/3 cup heavy cream (155 ml)

– 1 1/2 teaspoons salt (start with less and adjust to taste)

– 1 teaspoon ground pepper

– 1/4 to 1/2 teaspoon ancho chili powder (start with 1/4 and adjust to taste)

– 2/3 cup sour cream (160g)

– Shredded cheddar cheese for topping

– Chives for topping

– Additional sour cream for topping

– Additional bacon for topping

Instructions

1-Gather and Prep Ingredients: First things first, chop up those potatoes and onions so everything’s at hand. You’ll need to dice the potatoes into uniform pieces to help them cook evenly, just like the tips suggest.

2-Cook the Bacon and Aromatics: Next, fry the bacon in a big pot until it’s nice and crispy, then set it aside while you use the leftover fat to sautรฉ the onions and garlic. This is where that smoky flavor really starts to build, and it’s one of my favorite parts.

3-Build and Simmer the Soup: Add the flour to thicken things up, then pour in the broth, milk, and cream along with the potatoes and spices. Let it boil until the potatoes are tender, which takes about 10 minutes, and keep an eye on it to avoid any scorching.

4-Blend for Creaminess: Once it’s simmered, blend half the soup for that creamy texture we love, but hold off on blending the bacon to keep its crunch. Stir in the sour cream and bacon, then let it all meld together.
