Ingredients

– 1ΒΌ cups graham cracker crumbs for the crust

– 1 teaspoon vanilla extract for the filling

– 1 cup cold heavy cream for the filling, whipped

– 1 cup fresh strawberries for the red swirl, hulled and chopped

– 2 tablespoons granulated sugar for the red swirl

– 1 cup fresh blueberries for the blue swirl

– 2 tablespoons granulated sugar for the blue swirl

Instructions

1-First: combine 1ΒΌ cups graham cracker crumbs, 3 tablespoons granulated sugar, and 5 tablespoons melted unsalted butter in a bowl. Press this mixture firmly into a 9-inch pie dish and pop it in the fridge to chill while you move on.

2-Next: make the red swirl by simmering 1 cup chopped fresh strawberries with 2 tablespoons granulated sugar until soft, then puree it, strain out any seeds, and let it cool.

3-Repeat the process for the blue swirl using 1 cup fresh blueberries and 2 tablespoons granulated sugar.

4-For the filling, beat 16 oz softened cream cheese until it’s fluffy, then mix in ΒΎ cup sifted powdered sugar and 1 teaspoon vanilla extract. Gently fold in 1 cup whipped cold heavy cream to keep it light and airy.

5-Assemble everything by spreading the filling into your chilled crust, dotting it with the red and blue sauces, and swirling them gently with a toothpick. Refrigerate the pie for at least 6 hours or overnight to set.
